Moong Daal - Recipe of the month

1 cup brown rice

1 cup red lentils

6 cups water ( or veggie stock)

1/2 teespoon of salt

1 large onion

4 courgettes

4 cups of Kale or Spinach

1 tablespoon coconut oil

Spices to taste- coriander, cumin, turmeric etc

Wash the rice and lentils- add water and salt- bring to the boil and simmer until cooked and water absorbed

Slice onion and courgette and cook in large pan with the coconut oil until soft. Add the spices and cook through

Add the kale or spinach at the last minute to wilt

Mix all the ingredients and serve!- this great the next day too
